- 1 pound ground beef
- 1 can (14.5 oz) diced tomatoes
- 1 can (15 oz) black beans, rinsed and drained
- 1 can (15 oz) corn, drained
- 1 packet taco seasoning
- 1 onion, chopped
- 2 cups beef broth
- Salt and pepper to taste
Instructions
- In a large pot, brown the ground beef over medium heat, breaking it apart as it cooks. Drain off any excess fat.
- Add the chopped onion to the pot and cook until it’s softened, about 3-4 minutes.
- Stir in the diced tomatoes, black beans, corn, taco seasoning, beef broth, salt, and pepper.
- Bring the mixture to a boil, then reduce the heat and let it simmer for about 20 minutes.
- Serve hot and enjoy!
Notes
Feel free to substitute ground turkey for the beef or skip the meat entirely for a vegetarian version. Enhance flavor by adding minced garlic or using homemade beef broth.
