Description

A one-pot wonder that brings the robust flavors of tacos right to your bowl, featuring ground beef, hearty beans, sweet corn, and aromatic spices.


Ingredients

  • 1 pound ground beef
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 can (15 oz) corn, drained
  • 1 packet taco seasoning
  • 1 onion, chopped
  • 2 cups beef broth
  • Salt and pepper to taste

Instructions

  1. In a large pot, brown the ground beef over medium heat, breaking it apart as it cooks. Drain off any excess fat.
  2. Add the chopped onion to the pot and cook until it’s softened, about 3-4 minutes.
  3. Stir in the diced tomatoes, black beans, corn, taco seasoning, beef broth, salt, and pepper.
  4. Bring the mixture to a boil, then reduce the heat and let it simmer for about 20 minutes.
  5. Serve hot and enjoy!

Notes

Feel free to substitute ground turkey for the beef or skip the meat entirely for a vegetarian version. Enhance flavor by adding minced garlic or using homemade beef broth.
