Description

Ingredients

  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 2 carrots, diced
  • 4 cups chicken broth
  • 2 cups cooked chicken, shredded
  • 1 can (15 oz) diced tomatoes
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 tablespoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Tortilla strips for serving
  • Fresh cilantro for garnish
  • Lime wedges for serving

Instructions

  1. Heat 2 tablespoons of olive oil in a large pot over medium heat.
  2. Add the diced onion and minced garlic, sautéing until fragrant and soft, about 3-4 minutes.
  3. Stir in the diced bell pepper and carrots, cooking for another few minutes until they begin to soften.
  4. Pour in the chicken broth, then add in shredded chicken, diced tomatoes, and rinsed black beans.
  5. Season with cumin, chili powder, salt, and pepper.
  6. Bring to a gentle simmer and let cook for about 20 minutes to meld flavors.
  7. Serve hot, topped with crispy tortilla strips, fresh cilantro, and lime wedges.
