Instructions
- Preheat the oven to 350°F (175°C).
- Whisk together the eggs and cottage cheese until well combined.
- Stir in the shredded cheese, diced vegetables, salt, pepper, and any optional herbs or spices.
- Grease a muffin tin or use silicone muffin liners.
- Pour the egg mixture evenly into the muffin tin, filling each cup about 3/4 full.
- Bake for 20-25 minutes, or until the egg bites are set and slightly golden on top.
- Allow to cool slightly before removing from the tin. Serve warm or store in the refrigerator for meal prep.
