- 1 cup cottage cheese
- 4 large eggs
- 1 cup shredded cheese (cheddar or your choice)
- 1/2 cup chopped vegetables (spinach, bell peppers, etc.)
- Salt to taste
- Pepper to taste
Instructions
- Preheat your oven to 350°F (175°C).
- Grease a muffin tin with cooking spray or oil.
- In a mixing bowl, whisk together cottage cheese and eggs until well blended.
- Stir in shredded cheese and chopped vegetables, seasoning with salt and pepper.
- Pour the mixture into the muffin tin, filling each cup about 3/4 full.
- Bake for 20-25 minutes or until the egg bites are set and golden on top.
- Allow to cool for a few minutes before removing from tin.
- Serve warm and enjoy!
