Description

A wholesome breakfast delight, these egg bites are fluffy, protein-packed, and customizable, making them perfect for busy mornings or brunch.


Ingredients

  • 1 cup cottage cheese
  • 4 large eggs
  • 1 cup shredded cheese (cheddar or your choice)
  • 1/2 cup chopped vegetables (spinach, bell peppers, etc.)
  • Salt to taste
  • Pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a muffin tin with cooking spray or oil.
  3. In a mixing bowl, whisk together cottage cheese and eggs until well blended.
  4. Stir in shredded cheese and chopped vegetables, seasoning with salt and pepper.
  5. Pour the mixture into the muffin tin, filling each cup about 3/4 full.
  6. Bake for 20-25 minutes or until the egg bites are set and golden on top.
  7. Allow to cool for a few minutes before removing from tin.
