Description

A cozy, creamy, and ultra-satisfying baked casserole made with ground beef, cooked rice, and lots of melted cheese. It’s comforting, simple, and the perfect one-dish dinner for chilly nights or quick family meals.


Ingredients

  • 1 lb (450 g) lean ground beef
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 cups cooked rice (white or brown)
  • 1 can (10.5 oz) condensed cream of mushroom or chicken soup
  • ½ cup milk or broth
  • 1½ cups shredded cheddar cheese (divided)
  • 1 cup frozen peas or mixed vegetables (optional)
  • 1 tsp paprika
  • Salt and black pepper to taste
  • Olive oil for sautéing

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large skillet, heat a drizzle of olive oil and cook the ground beef until browned.
  3. Add diced onion and garlic. Sauté until softened and fragrant.
  4. Season with salt, pepper, and paprika. Drain excess grease if necessary.
  5. Stir in cooked rice, condensed soup, milk or broth, and half the shredded cheese.
  6. Add frozen vegetables and mix until well combined.
  7. Spoon mixture into a greased 9×13-inch baking dish.
  8. Top with remaining shredded cheese.
  9. Bake uncovered for 20–25 minutes, until bubbly and golden at the edges.
  10. Let rest for 5 minutes before serving.

Notes

Use leftover rice to save time. Swap condensed soup for a homemade sauce if preferred. Mix in salsa or chili flakes for heat. Great for freezing or prepping ahead for busy weeks.
