Description
A cozy, creamy, and ultra-satisfying baked casserole made with ground beef, cooked rice, and lots of melted cheese. It’s comforting, simple, and the perfect one-dish dinner for chilly nights or quick family meals.

- 1 lb (450 g) lean ground beef
- 1 medium onion, diced
- 2 cloves garlic, minced
- 2 cups cooked rice (white or brown)
- 1 can (10.5 oz) condensed cream of mushroom or chicken soup
- ½ cup milk or broth
- 1½ cups shredded cheddar cheese (divided)
- 1 cup frozen peas or mixed vegetables (optional)
- 1 tsp paprika
- Salt and black pepper to taste
- Olive oil for sautéing
Instructions
- Preheat oven to 375°F (190°C).
- In a large skillet, heat a drizzle of olive oil and cook the ground beef until browned.
- Add diced onion and garlic. Sauté until softened and fragrant.
- Season with salt, pepper, and paprika. Drain excess grease if necessary.
- Stir in cooked rice, condensed soup, milk or broth, and half the shredded cheese.
- Add frozen vegetables and mix until well combined.
- Spoon mixture into a greased 9×13-inch baking dish.
- Top with remaining shredded cheese.
- Bake uncovered for 20–25 minutes, until bubbly and golden at the edges.
- Let rest for 5 minutes before serving.
Notes
Use leftover rice to save time. Swap condensed soup for a homemade sauce if preferred. Mix in salsa or chili flakes for heat. Great for freezing or prepping ahead for busy weeks.
