- 2 large potatoes, peeled and diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 2 tablespoons olive oil

- 1 teaspoon thyme (optional)
Instructions
- In a large pot, heat the olive oil over medium heat. Sauté the onion and garlic until softened, about 3-4 minutes.
- Toss in the diced carrots and potatoes. Cook for another 2-3 minutes while stirring occasionally.
- Add the vegetable broth and bring everything to a boil.
- Once boiling, reduce the heat and let it simmer for about 20-25 minutes, or until the vegetables are tender when pierced with a knife.
- Using an immersion blender, purée the soup until it reaches your desired consistency—smooth and creamy or slightly chunky.
- Season with salt, pepper, and thyme if desired. Give it a final stir to incorporate the seasonings.
