Description

A creamy and comforting soup made from earthy carrots and potatoes, perfect for chilly nights.


Ingredients

  • 2 large carrots, diced
  • 2 large potatoes, peeled and diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 teaspoon thyme (optional)

Instructions

  1. In a large pot, heat the olive oil over medium heat. Sauté the onion and garlic until softened, about 3-4 minutes.
  2. Toss in the diced carrots and potatoes. Cook for another 2-3 minutes while stirring occasionally.
  3. Add the vegetable broth and bring everything to a boil.
  4. Once boiling, reduce the heat and let it simmer for about 20-25 minutes, or until the vegetables are tender when pierced with a knife.
  5. Using an immersion blender, purée the soup until it reaches your desired consistency—smooth and creamy or slightly chunky.
  6. Season with salt, pepper, and thyme if desired. Give it a final stir to incorporate the seasonings.
