A delightful and health-conscious recipe for Carrot Cake Energy Balls that transform classic carrot cake flavors into convenient no-bake treats.


Ingredients

  • 1 cup Medjool dates (pits removed)
  • 1/3 cup shredded carrots
  • 1 cup walnuts
  • 1 tbsp chia seeds
  • 1/3 cup shredded unsweetened coconut
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • Pinch of salt
  • 1 tsp vanilla extract
  • 1/2 cup shredded coconut for rolling

Instructions

  4. Roll each ball in the extra shredded coconut to coat evenly.
