- 1 lb chicken breast, cooked and shredded
- 1 cup andouille sausage, sliced
- 1 cup shrimp, peeled and deveined
- 1 can white beans, drained and rinsed
- 1 can diced tomatoes (14.5 oz)
- 1 onion, diced
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 tbsp Cajun seasoning
- 1 tsp olive oil
- Salt and pepper to taste
Instructions
- In a large pot, heat olive oil over medium heat. Add diced onion and minced garlic. Sauté until the onion becomes translucent.
- Stir in sliced andouille sausage and cook for about 5 minutes until browned.
- Add shredded chicken, drained white beans, diced tomatoes, chicken broth, and Cajun seasoning. Stir until combined.
- Increase heat to bring to a boil, then reduce and let simmer for 20 minutes.
- Toss in shrimp during the last 5 minutes of cooking.
- Season with salt and pepper to taste.
- Ladle into bowls and serve hot.
Notes
For added richness, garnish with cilantro, sour cream, or shredded cheese. Pairs well with cornbread or tortilla chips.
