Description

A cozy dish that combines the zest of Cajun cuisine with the heartiness of chili, perfect for chilly evenings.


Ingredients

  • 1 lb chicken breast, cooked and shredded
  • 1 cup andouille sausage, sliced
  • 1 cup shrimp, peeled and deveined
  • 1 can white beans, drained and rinsed
  • 1 can diced tomatoes (14.5 oz)
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 tbsp Cajun seasoning
  • 1 tsp olive oil
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Add diced onion and minced garlic. Sauté until the onion becomes translucent.
  2. Stir in sliced andouille sausage and cook for about 5 minutes until browned.
  3. Add shredded chicken, drained white beans, diced tomatoes, chicken broth, and Cajun seasoning. Stir until combined.
  4. Increase heat to bring to a boil, then reduce and let simmer for 20 minutes.
  5. Toss in shrimp during the last 5 minutes of cooking.
  6. Season with salt and pepper to taste.
  7. Ladle into bowls and serve hot.

Notes

For added richness, garnish with cilantro, sour cream, or shredded cheese. Pairs well with cornbread or tortilla chips.
