- 2 cups cooked chicken, shredded
- 1 cup andouille sausage, sliced
- 1 cup shrimp, peeled and deveined
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 cans white beans, drained and rinsed
- 4 cups chicken broth
- 1 can diced green chilies
- 1 tablespoon Cajun seasoning
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Heat the olive oil in a large pot over medium heat.
- Sauté the chopped onions and minced garlic until the onions turn translucent.
- Add the sliced andouille sausage and brown for several minutes.
- Stir in the shredded chicken, shrimp, white beans, chicken broth, and diced green chilies.
- Season with Cajun seasoning, salt, and pepper to taste.
- Bring everything to a boil, then reduce heat to a simmer for about 20 minutes.
