Description

A hearty and flavorful Cajun White Chicken Chili combining chicken, andouille sausage, and shrimp, perfect for cozy dinners and gatherings.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup andouille sausage, sliced
  • 1 cup shrimp, peeled and deveined
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 cans white beans, drained and rinsed
  • 4 cups chicken broth
  • 1 can diced green chilies
  • 1 tablespoon Cajun seasoning
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Sauté the chopped onions and minced garlic until the onions turn translucent.
  3. Add the sliced andouille sausage and brown for several minutes.
  4. Stir in the shredded chicken, shrimp, white beans, chicken broth, and diced green chilies.
  5. Season with Cajun seasoning, salt, and pepper to taste.
  6. Bring everything to a boil, then reduce heat to a simmer for about 20 minutes.
