A quick and flavorful Cajun dish combining smoked sausage, rice, and colorful vegetables, all cooked in one skillet.

- 1 lb smoked sausage
- 1 cup rice
- 1 bell pepper, diced
- 1 onion, diced
- 2 cloves garlic, minced
- 2 tbsp Cajun seasoning
- 2 cups chicken broth
- 2 tbsp olive oil
- Salt and pepper, to taste
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add diced onion and bell peppers; sauté until they soften, about 4-5 minutes.
- Stir in minced garlic and sliced smoked sausage; cook until the sausage is nicely browned.
- Add rice and Cajun seasoning; stir well to combine everything.
- Pour in chicken broth and bring it to a boil, letting those flavors meld.
- Reduce the heat to low, cover, and simmer until the rice is cooked, approximately 20 minutes.
- Taste and season with salt and pepper, as needed.
- Serve hot and enjoy the flavors!
Notes
Consider adding fresh parsley or sliced green onions on top for garnish. Pair with a simple green salad or cornbread.
