Description

A quick and flavorful Cajun dish combining smoked sausage, rice, and colorful vegetables, all cooked in one skillet.


Ingredients

  • 1 lb smoked sausage
  • 1 cup rice
  • 1 bell pepper, diced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 tbsp Cajun seasoning
  • 2 cups chicken broth
  • 2 tbsp olive oil
  • Salt and pepper, to taste

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add diced onion and bell peppers; sauté until they soften, about 4-5 minutes.
  3. Stir in minced garlic and sliced smoked sausage; cook until the sausage is nicely browned.
  4. Add rice and Cajun seasoning; stir well to combine everything.
  5. Pour in chicken broth and bring it to a boil, letting those flavors meld.
  6. Reduce the heat to low, cover, and simmer until the rice is cooked, approximately 20 minutes.
  7. Taste and season with salt and pepper, as needed.
  8. Serve hot and enjoy the flavors!

Notes

Consider adding fresh parsley or sliced green onions on top for garnish. Pair with a simple green salad or cornbread.
