Description

A comforting and creamy soup infused with Cajun spices, potatoes, and andouille sausage, perfect for any occasion.


Ingredients

  • 1 pound andouille sausage
  • 4 medium russet or Yukon Gold potatoes, diced
  • 1 cup chopped onions
  • 1 cup chopped bell peppers
  • 1 cup chopped celery
  • 2 teaspoons Cajun spices (paprika, cayenne, garlic powder)
  • 4 cups water or broth
  • 1 cup heavy cream
  • 1 cup shredded sharp cheddar cheese
  • Salt and pepper to taste

Instructions

  1. Heat a large pot over medium heat and cook the andouille sausage until browned.
  2. Add in the chopped onions, bell peppers, and celery. Sauté until softened, about 5-7 minutes.
  3. Stir in the diced potatoes along with your Cajun spices. Cook for 2-3 minutes to let the spices bloom.
  4. Pour in enough water or broth to cover the ingredients. Bring to a rolling boil.
  5. Once boiling, reduce the heat and let it simmer until the potatoes are fork-tender, about 15 minutes.
  6. Stir in the heavy cream and cheddar cheese, mixing until melted and creamy.
  7. Season with salt and pepper to taste. Give it a final stir!
  8. Serve hot and garnish with additional cheese if desired.

Notes

For extra flavor, sauté your spices with the sausage. Allowing the soup to simmer melds the flavors together. Adjust cream to your preference for richness.
