- 1 lb chicken breasts, diced
- 1 cup orzo pasta
- 1 bell pepper, diced
- 1 onion, diced
- 3 cloves garlic, minced
- 1 cup chicken broth
- 1 cup heavy cream
- 2 tbsp Cajun seasoning
- Salt and pepper to taste
- 2 tbsp olive oil
- Chopped parsley for garnish
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the diced chicken, seasoning it with salt, pepper, and Cajun seasoning. Cook until browned.
- Toss in the onion, bell pepper, and garlic, cooking until the veggies are softened.
- Stir in the orzo and chicken broth, bringing the mixture to a simmer.
- Reduce the heat, cover, and let it cook for about 10 minutes, stirring occasionally.
- Once the orzo is cooked, stir in the heavy cream and heat through.
- Garnish with chopped parsley before serving.
Notes
Store leftovers in an airtight container for up to 3 days, or freeze for up to a month. Add a splash of broth when reheating.
