Description

A delightful one-pot meal that combines tender chicken, creamy orzo, and a hint of Cajun spice, perfect for weeknight dinners.


Ingredients

  • 1 lb chicken breasts, diced
  • 1 cup orzo pasta
  • 1 bell pepper, diced
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 2 tbsp Cajun seasoning
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • Chopped parsley for garnish

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the diced chicken, seasoning it with salt, pepper, and Cajun seasoning. Cook until browned.
  3. Toss in the onion, bell pepper, and garlic, cooking until the veggies are softened.
  4. Stir in the orzo and chicken broth, bringing the mixture to a simmer.
  5. Reduce the heat, cover, and let it cook for about 10 minutes, stirring occasionally.
  6. Once the orzo is cooked, stir in the heavy cream and heat through.
  7. Garnish with chopped parsley before serving.

Notes

Store leftovers in an airtight container for up to 3 days, or freeze for up to a month. Add a splash of broth when reheating.
