- 1 medium butternut squash, peeled and sliced
- 1 cup heavy cream
- 2 shallots, finely chopped
- 2 cloves garlic, minced
- 2 teaspoons fresh sage, chopped
- Salt and pepper to taste

Instructions
- Preheat your oven to 375°F (190°C).
- In a skillet, heat a drizzle of oil over medium heat. Sauté the shallots and garlic until they soften, about 2-3 minutes.
- Stir in the fresh sage and let it cook for another minute.
- Pour in the heavy cream and simmer gently, then remove from heat.
- Grease a baking dish and layer the butternut squash slices, seasoning each layer with salt and pepper.
- Evenly pour the creamy mixture over the squash slices.
- Sprinkle grated cheese on top for a golden crust, if desired.
- Bake for 35-40 minutes until the squash is tender and the top is golden brown.
- Let it sit for a few minutes before serving.
Notes
For a lighter version, substitute heavy cream with half-and-half or nut-based cream for a dairy-free option. Adding a layer of ricotta can enhance creaminess.
