Description

A delightful fall dish combining tender butternut squash and tart apples, topped with a crunchy oat and nut mixture.


Ingredients

  • 2 cups butternut squash, peeled and diced
  • 2 cups apples, cored and sliced
  • 1/2 cup brown sugar
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp salt
  • 2 tbsp butter, melted
  • 1/2 cup oats
  • 1/4 cup chopped nuts (walnuts or pecans)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Peel and dice the butternut squash into uniform pieces.
  3. Slice the apples into 1/4 inch thick slices.
  4. In a large bowl, combine the diced squash and apple slices with brown sugar, cinnamon, nutmeg, salt, and melted butter.
  5. Gently toss the mixture to coat each piece.
  6. Lightly grease a 9×13 inch baking dish and pour the mixture into it.
  7. In a separate bowl, mix oats, chopped nuts, and an extra sprinkle of cinnamon; drizzle with melted butter.
  8. Sprinkle the oat mixture over the squash and apples.
  9. Bake for 35-40 minutes until the squash is fork-tender and apples are soft.
  10. Let cool for a few minutes before serving.

Notes

Serve warm with whipped cream or ice cream; can be made vegan by substituting butter with coconut oil.
