Description
A delightful fall dish combining tender butternut squash and tart apples, topped with a crunchy oat and nut mixture.
Ingredients

- 2 cups butternut squash, peeled and diced
- 2 cups apples, cored and sliced
- 1/2 cup brown sugar
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/4 tsp salt
- 2 tbsp butter, melted
- 1/2 cup oats
- 1/4 cup chopped nuts (walnuts or pecans)
Instructions
- Preheat your oven to 350°F (175°C).
- Peel and dice the butternut squash into uniform pieces.
- Slice the apples into 1/4 inch thick slices.
- In a large bowl, combine the diced squash and apple slices with brown sugar, cinnamon, nutmeg, salt, and melted butter.
- Gently toss the mixture to coat each piece.
- Lightly grease a 9×13 inch baking dish and pour the mixture into it.
- In a separate bowl, mix oats, chopped nuts, and an extra sprinkle of cinnamon; drizzle with melted butter.
- Sprinkle the oat mixture over the squash and apples.
- Bake for 35-40 minutes until the squash is fork-tender and apples are soft.
- Let cool for a few minutes before serving.
Notes
Serve warm with whipped cream or ice cream; can be made vegan by substituting butter with coconut oil.
