- 4 large eggs
- 1/4 cup sweetener (allulose, erythritol, or coconut sugar)
- 1 teaspoon vanilla extract
- 2 tablespoons coconut flour (or oat flour/all-purpose flour)
- 1 1/2 cups fresh or frozen blueberries
- Zest of 1 lemon (optional)
Instructions
- Preheat your oven to 350°F (175°C). Grease an 8×8-inch baking dish or line muffin tins for single servings.
- In a blender or food processor, combine the cottage cheese, eggs, sweetener, vanilla extract, and flour. Blend until smooth and creamy.
- Gently fold in most of the blueberries and the optional lemon zest, reserving a few berries for the top.
- Pour the mixture into the prepared baking dish. Scatter the reserved blueberries on top.
- Bake for 35-40 minutes, or until the center is set and the edges are golden brown.
- Allow to cool slightly before slicing. Enjoy warm or chilled.
