  • 1 teaspoon vanilla extract
  • 2 tablespoons coconut flour (or oat flour/all-purpose flour)
  • 1 1/2 cups fresh or frozen blueberries
  • Zest of 1 lemon (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease an 8×8-inch baking dish or line muffin tins for single servings.
  2. In a blender or food processor, combine the cottage cheese, eggs, sweetener, vanilla extract, and flour. Blend until smooth and creamy.
  3. Gently fold in most of the blueberries and the optional lemon zest, reserving a few berries for the top.
  4. Pour the mixture into the prepared baking dish. Scatter the reserved blueberries on top.
  5. Bake for 35-40 minutes, or until the center is set and the edges are golden brown.
