Description
A warm, comforting, high-protein blueberry breakfast bake that became our weekly ritual. Creamy cottage cheese, hearty oats, and juicy blueberries come together in a feel-good dish that’s perfect for busy mornings or cozy weekends.
Ingredients
Scale
- 1 cup cottage cheese (full-fat or low-fat)
- 2 ripe bananas (or 1 banana + 2 tbsp maple syrup)
- 2 eggs
- 1 tsp vanilla extract
- 1 tsp cinnamon
- 1 cup rolled oats (not quick oats)
- 1 cup fresh or frozen blueberries
- Cooking spray (for greasing)
Instructions
- Preheat the oven to 350°F (175°C).
- Lightly grease an 8×8-inch baking dish or four ramekins with cooking spray.
- In a blender or food processor, blend cottage cheese, banana (or banana and maple syrup), eggs, vanilla, cinnamon, and rolled oats until smooth but not completely liquid.
- Gently fold in the blueberries by hand (do not blend).
- Pour the batter into the prepared baking dish and sprinkle with a few extra oats or blueberries on top.
- Bake for 35–40 minutes, or 30 minutes if using ramekins, until the top is golden and the center is set.
- Let cool for 10 minutes before slicing and serving.
- Serve warm, chilled, or reheated with toppings like yogurt, nut butter, or maple syrup.
Notes
For best results, avoid overblending, use thicker cottage cheese, and don’t skip the cooling step. Frozen blueberries work great—toss with a little oats or flour before mixing to avoid sinking.
