Description

A delightful and nutritious breakfast bake combining cottage cheese, rolled oats, and fresh blueberries.


Ingredients

  • 1 cup cottage cheese
  • 1 cup rolled oats
  • 1 cup blueberries (fresh or frozen)
  • 2 eggs
  • 1/4 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon cinnamon (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Combine cottage cheese, oats, eggs, honey or maple syrup, vanilla extract, baking powder, salt, and cinnamon in a large mixing bowl. Stir until everything is nicely blended.
  3. Gently fold in the blueberries, ensuring they are evenly distributed.
  4. Pour the mixture into a greased baking dish, spreading it out evenly.
  5. Bake for 30-35 minutes, or until the top is golden brown and the bake is set.
  6. Allow it to cool slightly before diving in.

Notes
