- 1 cup cottage cheese
- 1 cup rolled oats
- 1 cup blueberries (fresh or frozen)
- 2 eggs
- 1/4 cup honey or maple syrup
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 teaspoon cinnamon (optional)
Instructions
- Preheat the oven to 350°F (175°C).
- Combine cottage cheese, oats, eggs, honey or maple syrup, vanilla extract, baking powder, salt, and cinnamon in a large mixing bowl. Stir until everything is nicely blended.
- Gently fold in the blueberries, ensuring they are evenly distributed.
- Pour the mixture into a greased baking dish, spreading it out evenly.
- Bake for 30-35 minutes, or until the top is golden brown and the bake is set.
- Allow it to cool slightly before diving in.
Notes
Serve warm with yogurt or extra cinnamon. Store leftovers in an airtight container for 3-5 days, or freeze for up to three months.
