Description

A nourishing breakfast packed with protein and fresh blueberries, perfect for busy mornings and family brunches.


Ingredients

  • 2 cups cottage cheese
  • 4 large eggs
  • 1/4 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 2 cups rolled oats
  • 1 cup almond milk
  • 2 cups fresh blueberries
  • Optional: chopped nuts or chia seeds

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×9-inch baking dish.
  2. In a large mixing bowl, whisk together cottage cheese, eggs, honey or maple syrup, vanilla extract, ground cinnamon, and salt until smooth.
  3. Stir in rolled oats and almond milk, and let sit for 5 minutes.
  4. Fold in blueberries and optional nuts or chia seeds gently.
  5. Pour the mixture into the prepared baking dish and spread evenly.
  6. Bake for 40-45 minutes until golden brown and a toothpick inserted in the center comes out clean.
  7. Let cool for 5-10 minutes, slice into squares, and serve warm.

Notes

Serve with Greek yogurt or honey, and customize with other fruits or nuts as desired.
