Ingredients

- 2 cups cottage cheese
- 4 large eggs
- 1/4 cup honey or maple syrup
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 2 cups rolled oats
- 1 cup almond milk
- 2 cups fresh blueberries
- Optional: chopped nuts or chia seeds
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9×9-inch baking dish.
- In a large mixing bowl, whisk together cottage cheese, eggs, honey or maple syrup, vanilla extract, ground cinnamon, and salt until smooth.
- Stir in rolled oats and almond milk, and let sit for 5 minutes.
- Fold in blueberries and optional nuts or chia seeds gently.
- Pour the mixture into the prepared baking dish and spread evenly.
- Bake for 40-45 minutes until golden brown and a toothpick inserted in the center comes out clean.
- Let cool for 5-10 minutes, slice into squares, and serve warm.
Notes
Serve with Greek yogurt or honey, and customize with other fruits or nuts as desired.
