- 2 cups low-fat cottage cheese
- 2 large eggs
- 1/4 cup honey or maple syrup
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1/2 cup rolled oats
- 1/2 cup almond milk
- 1 1/2 cups fresh or frozen blueberries
- 1/4 cup chopped nuts (optional)
- 1 tablespoon chia seeds (optional)
- Cooking spray or butter for greasing the pan
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9×9-inch baking dish.
- In a large bowl, whisk cottage cheese, eggs, honey or maple syrup, vanilla, cinnamon, and salt until smooth.
- Add rolled oats and almond milk, mix until combined, and let sit for 5 minutes.
- Gently fold in blueberries, nuts, and chia seeds if using.
- Pour the mixture into the prepared baking dish and spread evenly.
- Bake for 40–45 minutes, or until golden and a toothpick comes out clean.
- Let cool for 5–10 minutes before slicing and serve warm or chilled.
Notes
Optional to add lemon zest for brightness or use different berries for variety. For a vegan version, use a tofu-based substitute and a flax egg.
