Description

A hearty and comforting one-pot meal featuring savory sausage, creamy black beans, and fluffy rice, perfect for weeknight dinners.


Ingredients

Scale
  • 1 can black beans, drained and rinsed
  • 1 cup rice (white or brown)
  • 1 pound sausage (such as andouille or smoked sausage), sliced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 cups chicken broth or water
  • Fresh cilantro for garnish (optional)

Instructions

  1. Heat a drizzle of oil in a large pot or skillet over medium heat.
  2. Add the chopped onion and sliced sausage, cooking until the onion is translucent and the sausage is golden brown.
  3. Stir in the minced garlic, cumin, paprika, salt, and pepper.
  4. Add the rice, black beans, and chicken broth (or water), stirring to combine.
  5. Bring to a boil, then lower the heat to a simmer, cover, and cook for about 20 minutes.
  6. Remove from heat, fluff the rice with a fork, garnish with cilantro if desired, and serve hot.
