- 1 can black beans, drained and rinsed
- 1 cup rice (white or brown)
- 1 pound sausage (such as andouille or smoked sausage), sliced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- 2 cups chicken broth or water
- Fresh cilantro for garnish (optional)
Instructions
- Heat a drizzle of oil in a large pot or skillet over medium heat.
- Add the chopped onion and sliced sausage, cooking until the onion is translucent and the sausage is golden brown.
- Stir in the minced garlic, cumin, paprika, salt, and pepper.
- Add the rice, black beans, and chicken broth (or water), stirring to combine.
- Bring to a boil, then lower the heat to a simmer, cover, and cook for about 20 minutes.
- Remove from heat, fluff the rice with a fork, garnish with cilantro if desired, and serve hot.
