- 1 lb cooked chicken, shredded
- 1 can (15 oz) white beans, drained and rinsed
- 1 can (4 oz) diced green chilies
- 1 cup chicken broth
- 1 cup heavy cream or sour cream
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp chili powder
- Salt and pepper to taste
Instructions
- In a large pot, heat some oil over medium heat. Sauté the diced onion and minced garlic until translucent.
- Add the shredded chicken, white beans, diced green chilies, chicken broth, and heavy cream or sour cream to the pot. Sprinkle in cumin and chili powder. Stir everything until well combined.
- Bring the mixture to a simmer and cook for 15-20 minutes, stirring occasionally.
- Taste and adjust seasoning with more salt or pepper as needed.
- Serve hot, garnished with optional toppings like shredded cheese, fresh cilantro, or avocado slices.
Notes
Feel free to swap heavy cream with sour cream for a tangier option, or use low-sodium broth to control salt content.
