Description

A cozy and comforting sweet potato casserole topped with fluffy marshmallows and a brown sugar streusel, perfect for family gatherings and holidays.

Ingredients

Scale
  • 4 large sweet potatoes
  • 1/2 cup milk (or milk alternative)
  • 1/4 cup melted butter
  • 1/2 cup brown sugar
  • 1 teaspoon vanilla extract
  • 2 cups marshmallows
  • 1/2 cup all-purpose flour
  • 1/2 cup chopped pecans (optional)
  • 1 teaspoon cinnamon
  • A pinch of salt

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Boil sweet potatoes in a pot of water until tender, about 20-30 minutes.
  3. Drain and mash the sweet potatoes in a large mixing bowl. Add melted butter, milk, brown sugar, vanilla extract, cinnamon, and a pinch of salt; mix until smooth.
  4. Spread the sweet potato mixture into a greased baking dish.
  5. In a separate bowl, mix flour, brown sugar, and chopped pecans (if using) until crumbly; sprinkle this mixture evenly over the sweet potato layer.
  6. Top with marshmallows, distributing them evenly.
  7. Bake for about 25-30 minutes until the marshmallows are toasted and golden brown.
  8. Let it cool slightly before serving.

Notes

For a creamier texture, thoroughly mash the sweet potatoes and don’t leave lumps. Adjust the sweetness to your preference.
