- 4 large sweet potatoes
- 1/2 cup milk (or milk alternative)
- 1/4 cup melted butter
- 1/2 cup brown sugar
- 1 teaspoon vanilla extract
- 2 cups marshmallows
- 1/2 cup all-purpose flour
- 1/2 cup chopped pecans (optional)
- 1 teaspoon cinnamon
- A pinch of salt
Instructions
- Preheat your oven to 375°F (190°C).
- Boil sweet potatoes in a pot of water until tender, about 20-30 minutes.
- Drain and mash the sweet potatoes in a large mixing bowl. Add melted butter, milk, brown sugar, vanilla extract, cinnamon, and a pinch of salt; mix until smooth.
- Spread the sweet potato mixture into a greased baking dish.
- In a separate bowl, mix flour, brown sugar, and chopped pecans (if using) until crumbly; sprinkle this mixture evenly over the sweet potato layer.
- Top with marshmallows, distributing them evenly.
- Bake for about 25-30 minutes until the marshmallows are toasted and golden brown.
- Let it cool slightly before serving.
Notes
For a creamier texture, thoroughly mash the sweet potatoes and don’t leave lumps. Adjust the sweetness to your preference.
