Description

A creamy and sweet dish topped with toasty marshmallows, perfect for family gatherings and holiday feasts.


Ingredients

Scale
  • 4 cups sweet potatoes (fresh or canned)
  • 1/2 cup brown sugar
  • 1/4 cup butter, melted
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 2 cups mini marshmallows
  • 1/2 cup chopped pecans (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. If using fresh sweet potatoes, peel and boil until tender. Then mash until smooth. For canned sweet potatoes, drain and mash.
  3. In a large mixing bowl, combine the mashed sweet potatoes, brown sugar, melted butter, milk, vanilla extract, and salt. Stir thoroughly.
  4. Pour the mixture into a greased baking dish and smooth the top.
  5. Evenly sprinkle mini marshmallows over the top.
  6. Add chopped pecans on top of the marshmallows for extra crunch, if desired.
  7. Bake for 25-30 minutes, or until the marshmallows are golden brown and the casserole is heated through.
  8. Allow to cool slightly before serving.

Notes

For a richer flavor, use dark brown sugar. You can also make this ahead of time and store it in the fridge until ready to bake.
