Ingredients

- 4 cups sweet potatoes (fresh or canned)
- 1/2 cup brown sugar
- 1/4 cup butter, melted
- 1/2 cup milk
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 2 cups mini marshmallows
- 1/2 cup chopped pecans (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- If using fresh sweet potatoes, peel and boil until tender. Then mash until smooth. For canned sweet potatoes, drain and mash.
- In a large mixing bowl, combine the mashed sweet potatoes, brown sugar, melted butter, milk, vanilla extract, and salt. Stir thoroughly.
- Pour the mixture into a greased baking dish and smooth the top.
- Evenly sprinkle mini marshmallows over the top.
- Add chopped pecans on top of the marshmallows for extra crunch, if desired.
- Bake for 25-30 minutes, or until the marshmallows are golden brown and the casserole is heated through.
- Allow to cool slightly before serving.
Notes
For a richer flavor, use dark brown sugar. You can also make this ahead of time and store it in the fridge until ready to bake.
