Description

A delightful comfort food featuring tender chicken infused with lemon and herbs, served over fluffy rice.


Ingredients

  • 4 chicken thighs or breasts
  • 1/4 cup lemon juice
  • 2 tablespoons olive oil
  • 2 teaspoons dried oregano
  • 2 teaspoons garlic powder
  • Salt and pepper to taste
  • 1 cup chicken broth
  • 1 cup rice
  • 2 cups water
  • Fresh parsley for garnish

Instructions

  1. In a bowl, combine the lemon juice, olive oil, oregano, garlic powder, salt, and pepper. Mix well.
  2. Place the chicken in the slow cooker and pour the lemon herb mixture over it, ensuring it’s well coated.
  3. Add the chicken broth to the slow cooker.
  4. Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is tender.
  5. About 30 minutes before serving, prepare the rice according to package instructions, using the water and a pinch of salt.
  6. Once the chicken is cooked, shred it with two forks and mix it back into the flavorful juices.
  7. Serve the chicken atop the fluffy rice and garnish with fresh parsley.

Notes

For added flavor, consider browning the chicken before slow cooking or substituting with pork or tofu.
