Ingredients

- 4 chicken thighs or breasts
- 1/4 cup lemon juice
- 2 tablespoons olive oil
- 2 teaspoons dried oregano
- 2 teaspoons garlic powder
- Salt and pepper to taste
- 1 cup chicken broth
- 1 cup rice
- 2 cups water
- Fresh parsley for garnish
Instructions
- In a bowl, combine the lemon juice, olive oil, oregano, garlic powder, salt, and pepper. Mix well.
- Place the chicken in the slow cooker and pour the lemon herb mixture over it, ensuring it’s well coated.
- Add the chicken broth to the slow cooker.
- Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is tender.
- About 30 minutes before serving, prepare the rice according to package instructions, using the water and a pinch of salt.
- Once the chicken is cooked, shred it with two forks and mix it back into the flavorful juices.
- Serve the chicken atop the fluffy rice and garnish with fresh parsley.
Notes
For added flavor, consider browning the chicken before slow cooking or substituting with pork or tofu.
