Ingredients

  • 1 large onion, diced
  • 2 cloves garlic, minced
  • 1 can (15 oz) diced tomatoes
  • 1 can (15 oz) red kidney beans, drained and rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (6 oz) tomato paste
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon cayenne pepper (optional)
  • Salt and pepper to taste
  • 2 cups beef broth
  • Olive oil for sautéing

Instructions

  1. In a large pot over medium-high heat, add olive oil. Once shimmering, toss in the diced onion and sauté for about 3-4 minutes until soft and translucent.
  2. Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant, being careful not to burn it.
  3. Add ground beef to the pot, breaking it apart with a wooden spoon. Cook for 5-7 minutes until browned and no longer pink, draining excess fat if needed.
  4. Introduce chili powder, cumin, smoked paprika, and cayenne pepper (if using). Mix well and let it cook for 1-2 minutes to bloom the spices.
  5. Stir in the tomato paste, ensuring everything is well combined, and cook for an additional 2-3 minutes.
  6. Pour in the diced tomatoes and beef broth, adding salt and pepper to taste. Stir thoroughly, bring to a simmer, then lower the heat and let it cook for 20-25 minutes.
  7. Mix in the kidney and black beans, stirring well, and allow to simmer for another 10-15 minutes.
  8. Taste and adjust seasoning as necessary before serving into bowls.

Notes

For serving, consider garnishing with fresh cilantro, shredded cheese, or sour cream. It pairs well with cornbread or tortilla chips.
