- 1 sheet vegan puff pastry
- 1 cup fresh strawberries, sliced
- 2 tablespoons sugar
- 1 teaspoon vanilla extract
- 1 tablespoon cornstarch
- Plant-based milk for brushing
- Powdered sugar for dusting (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- Roll out the puff pastry on a lightly floured surface and cut it into even squares.
- In a bowl, mix the sliced strawberries, sugar, vanilla extract, and cornstarch until combined.
- Place a spoonful of the strawberry mixture in the middle of each pastry square.
- Fold the corners of the pastry toward the center and pinch to seal securely.
- Brush the tops with your favorite plant-based milk.
- Bake for 15–20 minutes, or until golden brown and puffed.
- Let them cool for a few minutes, then dust with powdered sugar if desired.
Notes
For a twist, try using blueberries or peaches instead of strawberries. Ensure the puff pastry is chilled for best results.
