Description

Delightful vegan Danish pastries filled with sweet strawberries, perfect for brunch or a snack.


Ingredients

  • 1 sheet vegan puff pastry
  • 1 cup fresh strawberries, sliced
  • 2 tablespoons sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon cornstarch
  • Plant-based milk for brushing
  • Powdered sugar for dusting (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Roll out the puff pastry on a lightly floured surface and cut it into even squares.
  3. In a bowl, mix the sliced strawberries, sugar, vanilla extract, and cornstarch until combined.
  4. Place a spoonful of the strawberry mixture in the middle of each pastry square.
  5. Fold the corners of the pastry toward the center and pinch to seal securely.
  6. Brush the tops with your favorite plant-based milk.
  7. Bake for 15–20 minutes, or until golden brown and puffed.
  8. Let them cool for a few minutes, then dust with powdered sugar if desired.

Notes

For a twist, try using blueberries or peaches instead of strawberries. Ensure the puff pastry is chilled for best results.
