- 1 can kidney beans
- 1 can black beans
- 1 can diced tomatoes
- 2 tbsp chili powder
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped (optional)
- Salt and pepper to taste
- 1 tsp cumin
- 1 tsp paprika
Instructions
- In a large pot, cook the ground beef over medium heat until it’s browned. Drain excess fat.
- Add chopped onion and bell pepper. Cook until they’re soft.
- Mix in the garlic, chili powder, cumin, and paprika. Stir for about 1 minute to let the spices bloom.
- Pour in the diced tomatoes (with juice) and beans. Stir well to combine.
- Bring the mixture to a gentle boil. Reduce heat and let it simmer for 20-30 minutes. Stir occasionally.
- Taste and adjust with salt and pepper as needed.
Notes
For a vegetarian option, substitute ground beef with lentils or textured vegetable protein. Customize spice levels by adding cayenne pepper or hot sauce.
