Description

This hearty chili combines ground beef, beans, and a symphony of spices, making it a perfect dish for gatherings and meal prep.

Ingredients

Scale
  • 1 lb ground beef
  • 1 can kidney beans, drained and rinsed
  • 1 can black beans, drained and rinsed
  • 1 can diced tomatoes
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 2 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp paprika
  • Salt and pepper to taste
  • 2 cups beef or vegetable broth

Instructions

  1. Brown the beef: In a large pot, cook the ground beef over medium heat until browned. Drain excess fat.
  2. Sauté veggies: Add chopped onions and bell peppers to the pot, cooking until softened.
  3. Mix spices: Stir in the chili powder, cumin, paprika, salt, and pepper, letting the spices bloom for about a minute.
  4. Combine ingredients: Add canned tomatoes and beans, followed by your choice of broth. Stir everything together.
  5. Simmer: Bring the chili to a boil, then reduce heat and let it simmer for 30 minutes to an hour, stirring occasionally.
  6. Taste and adjust: Before serving, taste and adjust seasonings as needed.

Notes

Chili can be stored in the refrigerator for up to 4 days or frozen for up to 3 months. Reheat on the stove or in the microwave.
