Description

A delightful chicken dish blending succulent chicken breasts with sweet blueberries and aromatic thyme, perfect for weeknight dinners or fancy brunches.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup fresh blueberries
  • 2 tablespoons fresh thyme leaves
  • 2 tablespoons olive oil
  • 1 tablespoon honey
  • Salt and pepper to taste
  • 1 tablespoon lemon juice

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Whisk together olive oil, honey, lemon juice, thyme leaves, salt, and pepper in a mixing bowl.
  3. Place the chicken breasts in a baking dish. Pour the marinade over them, making sure they’re coated nicely.
  4. Scatter the fresh blueberries generously on top of the chicken.
  5. Bake in your preheated oven for 25-30 minutes, until the chicken is cooked through and no longer pink in the center.
  6. Allow the chicken to rest for a few minutes before serving. Enjoy it with your favorite sides!
