- 4 boneless, skinless chicken breasts
- 1 cup fresh blueberries
- 2 tablespoons fresh thyme leaves
- 2 tablespoons olive oil
- 1 tablespoon honey
- Salt and pepper to taste
- 1 tablespoon lemon juice
Instructions
- Preheat your oven to 375°F (190°C).
- Whisk together olive oil, honey, lemon juice, thyme leaves, salt, and pepper in a mixing bowl.
- Place the chicken breasts in a baking dish. Pour the marinade over them, making sure they’re coated nicely.
- Scatter the fresh blueberries generously on top of the chicken.
- Bake in your preheated oven for 25-30 minutes, until the chicken is cooked through and no longer pink in the center.
- Allow the chicken to rest for a few minutes before serving. Enjoy it with your favorite sides!
Notes
