Ingredients

  • 2 tbsp olive oil
  • lbs ground beef (or mix with pork for richer flavor)
  • 1 large onion, diced
  • 1 green bell pepper, diced
  • 1 red bell pepper, diced
  • 4 cloves garlic, minced
  • 2 (15 oz) cans kidney beans, drained and rinsed
  • 1 (15 oz) can black beans, drained and rinsed
  • 2 (14 oz) cans diced tomatoes
  • 1 (6 oz) can tomato paste
  • 1½ cups beef broth
  • 3 tbsp chili powder
  • 1 tbsp ground cumin
  • 1 tsp smoked paprika
  • 1 tsp dried oregano
  • ½ tsp cayenne pepper
  • Salt and black pepper to taste
  • 1 tsp sugar or honey (optional)

Instructions

  1. Dice the onions and bell peppers, mince the garlic, and drain the canned beans.
  2. Heat olive oil in a large pot or Dutch oven over medium heat. Add the diced onions and bell peppers. Cook for about 5 minutes until softened.
  3. Stir in the minced garlic and let it cook for 1 minute, just until fragrant.
  4. Add the ground beef (or beef/pork mix) to the pot and cook for 5–7 minutes until browned. Drain any excess fat if needed.
  5. Incorporate the chili powder, cumin, paprika, oregano, cayenne, salt, and black pepper. Stir for 1–2 minutes to bloom the spices.
  6. Mix in the tomato paste and allow to cook for 2 minutes for a richer flavor.
  7. Pour in the diced tomatoes, beans, and beef broth. Stir to combine everything well.
  8. Bring to a gentle simmer, reduce heat to low, and partially cover the pot. Cook for 45–60 minutes, stirring occasionally.
  9. Taste and adjust seasoning or consistency as needed. Add more broth for a thinner chili or let it simmer uncovered to thicken.
  10. Serve into bowls and top with your favorite garnishes like cheese, sour cream, green onions, or tortilla chips.

Notes

Storing leftovers is easy; it can be kept in the fridge for up to 5 days or frozen for three months. Consider creative toppings like diced avocado or cilantro.
