- 1 lb ground beef
- 1 onion, diced
- 3 cloves garlic, minced
- 1 can kidney beans, drained
- 1 can diced tomatoes (with juice)
- 2 tablespoons chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
- Optional: shredded cheese, sour cream, or chopped green onions for topping
Instructions
- In a large pot, heat a drizzle of oil over medium heat. Add diced onions and sauté until translucent, about 5 minutes.
- Stir in minced garlic and cook for an additional minute.
- Add the ground beef to the pot and cook until browned, breaking it apart as it cooks.
- Once the beef is browned, drain any excess fat.
- Stir in the kidney beans, diced tomatoes, chili powder, cumin, salt, and pepper.
- Bring to a simmer, then reduce the heat to low. Cover and let it cook for about 30 minutes, stirring occasionally.
- Taste and adjust seasoning if necessary before serving.
Notes
Feel free to substitute ground turkey or a plant-based option if preferred. For an extra kick, add diced jalapeños or cayenne pepper.
