- 2 cups cooked, shredded chicken (grilled, roasted, or poached)
- 1 cup chopped celery
- ½ cup diced red onion
- 1 cup halved grapes or diced apples
- ½ cup chopped walnuts or almonds (optional)
- ¾ cup mayonnaise
- 1 tablespoon Dijon mustard
- Salt and pepper to taste
- Fresh herbs for garnish (dill or parsley)
Instructions
- Cook the chicken if it isn’t pre-cooked. Poach in simmering water for about 15-20 minutes or grill until fully cooked. Let it cool, then shred it.
- In a large bowl, combine the shredded chicken with chopped celery, red onion, grapes, and nuts.
- In a separate bowl, whisk together mayonnaise, Dijon mustard, salt, and pepper.
