- 4 chicken breasts
- 1 cup sundried tomatoes
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 2 garlic cloves, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- In a skillet over medium heat, add olive oil and sauté the minced garlic until fragrant (about 30 seconds).
- Toss in the sundried tomatoes and cook for another 2-3 minutes.
- Stir in the heavy cream and Parmesan cheese, seasoning with Italian seasoning, salt, and pepper to taste.
- Place the chicken breasts in a baking dish and pour the creamy sauce over the top.
- Bake for 25-30 minutes or until the chicken is cooked through (internal temperature should reach 165°F).
- Garnish with fresh basil before serving.
Notes
Serve over pasta for a full meal. Can substitute heavy cream with half and half or Greek yogurt for a lighter version.
