Baked Cottage Cheese Eggs are a quick, protein-packed breakfast perfect for busy mornings. This easy dish blends creamy cottage cheese with fluffy eggs, delivering a nutritious and satisfying start to your day. Customize with your favorite veggies, cheeses, and seasonings for a versatile meal the whole family will love.

Ingredients

Scale
  • 6 large eggs
  • 1 cup cottage cheese
  • ½ teaspoon salt, or to taste
  • ¼ teaspoon black pepper
  • Optional: ½ cup shredded cheese (cheddar, mozzarella, or your choice)
  • Optional: 1 cup sautéed vegetables (bell peppers, spinach, mushrooms, etc.)
  • Optional: ½ cup cooked meat (bacon, sausage, ham)
  • Optional: Fresh herbs (parsley, chives, oregano)

Instructions

  1. Preheat the oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish with cooking spray or olive oil.
  2. In a large mixing bowl, whisk together the eggs and cottage cheese until smooth and well combined. Season with salt and pepper.
  3. If using, stir in shredded cheese, sautéed vegetables, cooked meat, or fresh herbs.
  4. Pour the mixture into the prepared baking dish and spread evenly.
  5. Bake for 40–50 minutes, or until the center is set and the top is lightly golden brown. If the top browns too quickly, cover with foil for the last 10 minutes.
  6. Let the bake cool for 10 minutes before slicing and serving. Enjoy warm, or store leftovers in the refrigerator for up to 4 days.
