Ingredients

- 2 cups cooked chicken, shredded
- 1 cup edamame, shelled
- 2 cups mixed vegetables (bell peppers, carrots, cucumbers)
- 4 cups mixed salad greens
- 1/4 cup peanuts, chopped
- 2 tablespoons sesame oil
- 3 tablespoons soy sauce
- 2 tablespoons peanut butter
- 1 tablespoon honey
- 1 tablespoon rice vinegar
- Salt and pepper to taste
Instructions
- In a large bowl, combine the salad greens, edamame, mixed vegetables, and shredded chicken.
- In a separate bowl, whisk together sesame oil, soy sauce, peanut butter, honey, and rice vinegar until well combined.
- Pour the dressing over the salad and toss everything to coat evenly.
- Season with salt and pepper to taste.
- Finish by topping with chopped peanuts before serving.
- Serve immediately or keep in the refrigerator for meal prep.
Notes
Feel free to use any vegetables you like! For an extra zing, add a splash of lime juice to the dressing.
