Description

A delightful blend of vibrant flavors and textures with tender chicken, crunchy vegetables, and creamy peanut dressing.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup edamame, shelled
  • 2 cups mixed vegetables (bell peppers, carrots, cucumbers)
  • 4 cups mixed salad greens
  • 1/4 cup peanuts, chopped
  • 2 tablespoons sesame oil
  • 3 tablespoons soy sauce
  • 2 tablespoons peanut butter
  • 1 tablespoon honey
  • 1 tablespoon rice vinegar
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the salad greens, edamame, mixed vegetables, and shredded chicken.
  2. In a separate bowl, whisk together sesame oil, soy sauce, peanut butter, honey, and rice vinegar until well combined.
  3. Pour the dressing over the salad and toss everything to coat evenly.
  4. Season with salt and pepper to taste.
  5. Finish by topping with chopped peanuts before serving.
  6. Serve immediately or keep in the refrigerator for meal prep.

Notes

Feel free to use any vegetables you like! For an extra zing, add a splash of lime juice to the dressing.
