Ingredients

  • 1 lb chicken breast, cooked and shredded
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 can diced tomatoes
  • 1 packet taco seasoning
  • 4 cups chicken broth
  • 1 bell pepper, diced
  • 1 onion, diced
  • 1 cup salsa
  • Salt and pepper to taste
  • Toppings: cheese, sour cream, avocado, cilantro

Instructions

  1. In a large pot, sauté onions and bell peppers over medium heat until softened, about 5 minutes.
  2. Add the cooked chicken, black beans, corn, diced tomatoes, salsa, taco seasoning, and chicken broth.
