Description

A gold medal-worthy chili recipe with a flavor explosion, perfect for game days and family dinners.


Ingredients

  • 2 lbs Ground Beef (80/20 blend)
  • 1 large Onion, chopped
  • 2 Green Bell Peppers, chopped
  • 2 Red Bell Peppers, chopped
  • 4 cloves Garlic, minced
  • 2 (28 oz) cans Crushed Tomatoes
  • 1 (15 oz) can Tomato Sauce
  • 1 (15 oz) can Diced Tomatoes, undrained
  • 1 (15 oz) can Kidney Beans, rinsed and drained
  • 1 (15 oz) can Black Beans, rinsed and drained
  • 1 (15 oz) can Pinto Beans, rinsed and drained
  • 1 cup Beef Broth
  • ¼ cup Chili Powder (adjust to taste)
  • 2 tablespoons Ground Cumin
  • 1 tablespoon Smoked Paprika
  • 1 tablespoon Dried Oregano
  • 1 teaspoon Cayenne Pepper (optional)
  • 1 teaspoon Salt (or to taste)
  • ½ teaspoon Black Pepper (or to taste)
  • 2 tablespoons Olive Oil or Vegetable Oil
  • 1 tablespoon Brown Sugar (optional)
  • Fresh Cilantro, chopped (for garnish, optional)
  • Shredded Cheddar Cheese (for garnish, optional)
  • Sour Cream or Greek Yogurt (for garnish, optional)
  • Chopped Green Onions (for garnish, optional)
  • Jalapeño slices (for garnish, optional)

Instructions

  1. Chop the onion, green, and red bell peppers into uniform pieces, and mince the garlic.
  2. In a large pot, heat the olive oil over medium-high heat and brown the ground beef.
  3. Drain excess grease from beef.
  4. Add chopped onion and bell peppers; sauté for 5-7 minutes until softened.
  5. Stir in minced garlic and spices; cook for 1 additional minute.
  6. Add crushed tomatoes, tomato sauce, undrained diced tomatoes, and rinsed beans. Mix well.
  7. Add beef broth, bring to a simmer, and cover. Let simmer for at least 1 hour.
  8. Taste and adjust seasonings as necessary. Consider adding optional brown sugar if too acidic.
  9. Serve in bowls with garnishes of fresh cilantro, cheddar cheese, sour cream, green onions, or jalapeños.

Notes

This chili gets better with time; consider refrigerating leftovers for use throughout the week.
