Description

A deliciously cheesy and hearty vegetable lasagna perfect for any occasion.


Ingredients

Scale
  • 9 lasagna noodles
  • 2 cups ricotta cheese
  • 3 cups shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 2 cups spinach, chopped
  • 1 cup mushrooms, diced
  • 1 zucchini, sliced
  • 2 cups marinara sauce
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cook lasagna noodles according to package instructions; drain.
  3. In a bowl, mix ricotta cheese, spinach, mushrooms, zucchini, oregano, garlic powder, salt, and pepper.
  4. Spread a thin layer of marinara sauce at the bottom of a baking dish.
  5. Layer 3 lasagna noodles on top, followed by half of the ricotta mixture and a third of the mozzarella.
  6. Repeat the layers and finish with remaining noodles, marinara sauce, and mozzarella cheese.
  7. Sprinkle Parmesan cheese on top.
  8. Cover with foil and bake for 30 minutes.
  9. Remove foil and bake for an additional 15 minutes until cheese is bubbly.
  10. Let it cool for 10 minutes before serving.

Notes

You can add other vegetables like bell peppers or eggplant for variety.
