Instructions
- Preheat your oven to 350°F (175°C) and line a quarter-sized baking sheet with parchment paper. Lightly spray with olive oil to prevent sticking.
- Combine the cottage cheese and eggs in a blender. Add any desired seasonings and blend until smooth.
- Pour the mixture onto the prepared baking sheet and spread it evenly to form a large, thin rectangle.
- Transfer the baking sheet to the oven and bake for about 35-40 minutes, or until the flatbread is firm and golden brown around the edges.
- Allow the flatbread to cool completely before removing it from the baking sheet. Enjoy it plain or use it as a base for sandwiches.
